Mini Tomato and Mozarella Sticks

Ingredients:

  • 250 grams cocktail or date-shaped tomatoes
  • 250 fresh miniature mozzarella balls
  • 1 bunch of fresh basil leaves

Dressing:

  • 2 TBSP of balsamic vinegar
  • 1 TBSP honey
  • Fresh ground salt and pepper
  • 1 tsp of fig mustard
  • 2 shakes of Tabasco or a pinch of fresh chili flakes
  • 1 pinch of dried Italian herbs
  • 2 TBSP of olive oil
  • 6 chopped  basil leaves
  • Toothpicks

Putting it together:

-       Wash the tomatoes and cut in half

-       Cut the mozzarella balls in half

-       Wash the basil leaves and remove from stem

-       Take a toothpick and “string up” ½ tomato, a ½ mozzarella ball wrapped
in a basil leaf followed by the other tomatoes ½.. Place the finished sticks
on the serving platter.

-       Continue until all tomatoes or mozzarella balls are used up.

-       Mix the dressing beginning with salt & pepper, vinegar, mustard and
Tobasco or chili leaves, and the pinch of Italian herbs. Mix well and pour
in the oil while mixing.

-       Drizzle the dressing over the tomato, mozzarella sticks.
