Black and White Macadamia Cookies
Inspired by Sunset
A big yummy chunky chocolate cookie, easy and fun to make!
Ingredients:
- 300 grams / 10 ounces bittersweet block chocolate, roughly chopped
- 120 grams / ½ cup butter, chopped into pieces
- 2 eggs, large and slightly beaten
- 2 tsps vanilla or 4 drops vanilla extract
- 200 grams / 1 cup sugar
- 200 grams / 2 cups flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 160 grams / 1 cup white chocolate chips or chopped white chocolate
- 125 grams / 1 cup salted macadamia nuts, quartered or roughly chopped
- powdered sugar (optional)
Putting it all together:
- Set a large metal bowl with the chocolate and the butter on a pot of simmering water – the bowl should not touch the water and the water should not boil.
- Melt, stirring occasionally until melted and smooth, approx. 5 minutes.
- In the meantime combine the flour, baking powder, salt and baking soda, stirring lightly to mix.
- Remove the bowl from the heat and add the sugar, eggs and vanilla, whisking well to mix.
- Add the flour mixture to the chocolate and egg mixture, stirring until well blended. Add the white chocolate and the nuts. Stir until well mixed.
- Cover the bowl with plastic or foil and put it in the fridge to cool until it is firm about 1 hour.
- Preheat the oven to 325 degrees Fahrenheit / 170 degrees Celsius and cover 2 baking trays with parchment baking paper.
- Remove the dough from the fridge, uncover and using a teaspoon scoop up a spoon of dough and rub it between your palms to form a dough ball of about 2 in / 5 cm in diameter. Place the balls on the baking sheet leaving enough space in between for the balls to turn into cookie disks.
- Continue until all the dough is used up.
- Bake in the oven for 12-15 minutes until the cookies are hard on the outside and still chewy inside – note that they will flatten and crack, that’s fine.
- Cool for 5 minutes on the sheet before removing them to a rack to cool completely.
- You can sprinkle powdered sugar over them if you want them to look like they’ve been out in the snow. (optional)
Makes about 30 cookies.
